Pumpkin Spice, love it or hate it, is the flavor of the season. What started as a blend of ground spices, meant to be added to pumpkin pie, has become the flavor of fall. Because we associate it with our beloved pumpkin pie and all the nostalgic memes of Thanksgiving, we can’t get enough. It may have started with a latte, but now it has moved to everything from cereals, peanut butter, salsa and ice cream right on over to air fresheners and fabrics. The problem with most of these products is the problem with so many industrial foods. Many are full of artificial flavors and processed ingredients- and nor real spice or pumpkin. Meal Prep Your Breakfast with Spice
How often do you eat a good breakfast? Do you ever run out the door with nothing but a cup of coffee under your belt, or do you resort to boxed cereal very day? Treat yourself to a real breakfast. Once you make this easy prep and put it in the fridge, you are set with 4 breakfasts, all you need to do is scoop it into a bowl, or a tub to take with as you run out the door. The pumpkin spice flavor makes it feel like a dessert, but it is truly a nutritious breakfast.
There’s Protein in My Pumpkin Spice!
Yes, instead of a vacuous bowl of sugar, this is a solid breakfast. Youre going to puree silken tofu and almond into the mix, to amp up the nutrient density. A bit of Squash puree gives it real pumpkin cred, and the Vitamin A, carotenoids and fiber that hide in the orange veg. Rolled oats are always a star on the breakfast scene, with lots of fiber, minerals, and the beta-glucans fiber that helps remove cholesterol from your body.

Once you have this prepped, you will open that refrigerator and be filled with joy when you remember that breakfast is solved. I must admit, it is a great snack, too, when you realize that you need a few bites of something to hold you over until dinner.

Pumpkin Spice Overnight Oats with Pumpkinseeds
Ingredients
- 2 cups thick rolled oats
- 1 cup unsweetened almond milk
- 1 cup water
- 1/2 cup cooked pumpkin
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 6 ounces extra firm tofu, silken
- 1/4 cup slivered almonds
- 1/4 cup maple syrup
Topping
- 1 cup pepitas raw, shelled
- 2 tablespoons organic sugar
Instructions
- Place the oats in a 4 cup storage container.
- In the blender, combine the almond milk, water, pumpkin, cinnamon, cloves, nutmeg, vanilla, salt, tofu, almonds and maple syrup. Secure the lid and blend on high until very smooth. Pour over the oats, scraping the container with a spatula to get it all out. Stir to mix, then refrigerate overnight.
