Fall is Pumpkinseed Time!
I was so happy to appear on Twin Cities Live with one of my tastiest Fall salads. A combination of Chewy farro, roasted squash, pears, and spiced toasted pumpkinseeds that everyone loves. I did a bit of demo on how to cut and peel a winter squash, and how to toast pepitas (hull-less pumpkinseeds) in a saute pan. Farro salads are exactly what you need for Fall.
Afterward, I stayed to talk about what I’ve been watching, reading and listening to, and that was really fun.
