I saw your feature on Minnesota Live the other day and I’m anxious to try the quinoa salad, and also to check out the new cookbook on grains. I try to eat clean and mostly plant based, which leads to this comment; I am so surprised you are using canola oil for any recipe. All seed oils are known to be inflammatory and it can so easily be replaced with avocado, olive oil, or coconut oil. I know on screen you did state you were using avocado oil, but then stated it would be fine to use canola. When cooking I usually use avocado for high temps, olive oil for lower temps, and even ghee for frying. You have such an emphasis on healthy eating, I do hope you reconsider the use of oils in your recipes for your followers.
Dear Kate,
I agree that avocado is a very healthful oil, but there are people I respect who think canola is good. There are people who think avocado is too water intensive, etc. So I leave it to the viewer to decide. People have different concerns.
