Ingredients

pears
or 4 large ones

cup
walnut oil

tablespoons
champagne vinegar
1/4
cup
fresh tarragon
plus sprigs for garnish
1/4
teaspoon
salt
1/4
teaspoon
black pepper
1/4
cup
chopped toasted walnuts
Instructions
Chop the pears and place in a large bowl. In a cup, whisk the walnut oil and champagne vinegar, then pour over the pears. Add the tarragon, salt and pepper and toss to mix. Serve topped with walnuts.
